During those long shifts, we know how important it is for us in the medical profession to have a good lunch to maintain energy. As hard-working professionals, there is little doubt that saving time is crucial, and that is why here at AMPM Medical Scrubs we've put together this handy list of simple, healthy lunch recipes.
What you'll need
- 1 Pita (sliced in half)
- A handful of shredded lettuce
- Sliced cucumber pieces
- Sliced ham/chicken/turkey
Instead of buying those expensive, unhealthy snack packs why not assemble your own? Quick and easy, you're just preparing the ingredients, and then at lunchtime, you can assemble your pita tailored to how you are feeling at that very moment!
Slow cooked sausage and pasta
What you'll need (1 portion)
- 1 Sausage
- 1 Small cup of pasta
- Favorite vegetables
- Half a carton of chicken or vegetable broth
If you don't already own a crock pot, we recommend investing in one! On your day off, why not make 3-4 portions of sausage and pasta broth that can be used as an easy lunch, snack or even extra dinner when you get caught out at the end of a long shift! Kept in a container in the fridge, it really is the perfect back up meal. To cook, all you need to do is add the ingredients to the slow cooker or crock pot and leave before serving up and allowing to cool. Your servings can now be stored in the refrigerator until you want to eat!
Mac and cheese mug
What you'll need
- ⅓ cup pasta
- ¾ cup water, cold
- 4 tablespoons milk
- ¼ teaspoons cornstarch (cornflour)
- 4 tablespoons grated cheddar cheese
Mix pasta and water in a mug, microwave for 3 and a half minutes.
Add milk, cheese and cornstarch, stir well, and microwave for a further minute.
Stir again, and there you go! The easiest mac and cheese of your life!
Ok, not the healthiest meal, but maybe a treat one day a week! You can either re-heat at work, store in a thermos until lunch or even use the microwave on your lunch break to create a 5-10 minute, piping hot meal there and then!
What you'll need
- Two eggs
- Lettuce of choice
- Salad dressing (an herby vinaigrette works well)
The key here is the vitamins and minerals that you receive from the salad plus the high-quality, energizing protein from the egg. Hard boil the eggs in advance and we have found that putting the eggs in cold water, bringing to the boil, covering, and then letting stand for around 10 minutes produce the best-boiled egg. Remember to submerge the eggs in cold water straight out of the hot water when done! Now, chop your other veggies, add the chopped hard-boiled eggs and a salad dressing of your choice, and you have a vitamin and protein filled lunch! Boiled eggs stay fresh in the refrigerator for approximately 7 days after cooking, so why not make a batch of egg salad?
Experiment with what works for you!
Of course, experimenting to find out what works for you is key. Whatever your favorite recipes are, preparation is key. Try and find 15 minutes at the start of the week to plan your meals, and it's always worth spending some time on your days off doing some food prep. Although food prep on your days off may not sound exciting, it will pay dividends when you're feeling hungry at work later in the week!
